Manzanilla is essentially a delicate oil, albeit with the slight edge that is characteristic of many Spanish varieties. Its warmth and remarkable fragrance can be strangely reminiscent of Turkish Delight. In cooking, Manzanilla olive oil helps to bring out flavours, and lets them speak for themselves – most notably in subtle ingredients. Manzanilla olives are almost spherical, and look truly luscious, like gorgeous cherries, as they ripen on the trees. Our Manzanilla olives do not yield up their oil easily or in great quantities, but the quality makes the quest worthwhile.
