Frantoio is the benchmark in olive oil. It is characteristically Italian, but it is also universal in its flavour, with nothing overdone. Because the olives ripen late, our Frantoio oil is warming and has little pungency. It leaves a rich, mellow flavour on the palate. Sometimes known in Australia as ‘Paragon’, the Frantoio olive is of medium size, normally 20mm long, with a mildly bulbous bottom. The Frantoio trees are great growers in our grove, many having magnificent trunks inside ten years from planting. Frantoio is an all-purpose oil, particularly well-suited to salads, with a savoury quality.
